Spicy Shrimp Burrito Bowl

If you like your shrimp as spicy as your workouts, this meal prep recipe is for you! 

Serves: 3-4 | Cook time: 30 minutes

Ingredients:

  • 15-20 medium shrimp
  • 2 cup brown rice
  • 1 cup black beans
  • 1 cup corn
  • 1 cup tomatoes, diced  
  • 1/2 cup cheddar cheese (optional)
  • 1 tbsp olive oil 
  • 2 tsp garlic minced 
  • 1 tsp chilli flakes or powder 
  • 1/4 tsp onion powder 
  • 1/4 tsp himalayan salt 
  • 1/2 tsp ground cumin
  • 1 lime
  •  

    Shrimp Meal Prep Recipe

    Directions:

    1. Whisk olive oil, garlic, chilli, cumin, onion powder and salt in a medium bowl.
    2. Add shrimp to bowl. Mix thoroughly so shrimp is coated. Set aside in refrigerator for 20 minutes or longer.
    3. Bring 4 cups of water to boil in saucepan. Once boiling, add brown rice. Cover with lid until water is absorbed. Set aside to cool. 
    4. Heat skillet on high for 2-3 minutes. Add olive oil and shrimp. Cook shrimp on medium-high heat for about 5 minutes or until cooked through. Set aside to cool.
    5. Prepare meal containers. Divide brown rice, black beans, corn, tomatoes, cheese evenly into containers. Top with shrimp and a slice of lime. 
    6. Cover and refrigerate. Store for up to 4 days.
    7. Enjoy!
